A home cooking class featuring food of the Philippines was held on Friday, the 15th of June. The instructors were Maria Kadowaki and Jenaline Watanabe, who were studying Japanese at ANIC.

We prepared adobo (chicken stew), lumpia, toge ( vegetable spring roll), sinigang ( soup ), rache, and flan (pudding).

They said sliced pork belly meat can be substituted for chicken when making adobo. Another option is to daikon radish, okra, and eggplant to the sinigang. ( It is typical for home cooking to be able to replace the customary ingredients with things readily available at a person’s home. )

It was a perfect summer meal! We were happily satisfied, leaving with full stomachs.
